Nut & Chococlate Energy Slice

What you need: 


- 2tbsp coconut oil 

- 200-250g cashew butter (but any nut butter works)

- 30g of chocolate 

- 9 medjool dates

- 1 cup of quinoa puffs (or rice or grain of choice)

- 1/2 cup of seeds (i used pumpkin and sunflower)

- 1/2 cup of almonds (or any other nut, but almonds give it a nice crunch)

- 1/3 cup of shredded coconut

- 1 tbsp of chia seeds

- 1 heaped tbsp of green smoothie powder (optional)

- 1/2 tsp of cinnamon (optional)

- 1/2 tsp of turmeric (optional)

- 1/2 tsp of ginger (optional)


Chocolate Topping:

- 2 tbsp of coconut oil

- 1 tbsp of cashew butter (or any other)

- 1 tbsp of agave syrup (or rice or maple or honey)

- 2 tbsp of cacao powder





1) First mash all dates with a fork until it looks relatively smooth (this is hard work, but it pays off, trust me!)

2) In the meantime you can melt the coconut oil with the nut butter and chocolate on very low heat (on an electric stove: 1-2) 

3) Then add in the dates, and mix in well 

4) Mix all other ingredients in a bowl and stir well before adding it into the creamy date mixture

5) Stir well 

6) Line a baking tray and pour in the mixture

7) Spread out evenly and put into the fridge

8) While the mixture cools down in the fridge, you can start preparing the chocolate

9) Put all wet ingredients into a pot on low heat (again on 1-2 on an electric stove)

10) When combined, take it off the stove and add the cacao powder - stir until combined

11) Pour on top of the Slice mixture and put it back in the fridge for around 1-2 hours, or in the freezer for 1/2 hour if you can't wait to try them
