WILD HONEY AND LEMON

B A N A N A - C H O C O L A T E M U F F I N S

Makes 12-14 muffins

 

Ingredients:

4 ripe bananas

4 tbsp coconut oil

4 tbsp agave/rice/maple syrup

2 tbsp coconut sugar (I used a mix of coconut sugar and cacao powder)

2 tsp baking powder

2 tbsp nut butter

1 cup of spelt flower

1 egg

1 tbsp chia seeds (optional)

1 tbsp protein powder (optional)

1 tbsp greens (optional)

1/2 tsp vanilla powder

A pinch of salt

30g of chocolate 

 

 

 

 

 

 

 

Directions:

1. Preheat the oven to 180°C 

2. Blend bananas with all wet ingredients

3. Mix together all dry ingredients, then add to the banana mixture

4. Cut chocolate in chunks, and add into the mixture

5. Give it one more blend, then pour into the muffin paper cups

6. Put in the oven, and bake for 20-22 minutes

7. Top with yogurt/chocolate/nut butter/fruit etc.
