For the Energy Bites:
11 dates
1 cup of nuts (I used hazelnuts)
2 tbsp of cacao-coconut sugar blend (if you don't have this take 2 tbsp of cacao powder + 2 tbsp of maple syrup)
1-2 tbsp of nut butter (I used peanut butter)
1tbsp of coconut oil
1 tbsp of protein powder (optional)
1 tbsp of greens powder (optional)
For the Chocolate Cover:
40g of cacao butter
40g of coconut oil
20g of cacao powder
3 tbsp of maple syrup (add more if you like it sweeter)
1. Blend nuts, until they form a rough flour
2. Add dates and blend
3. Add all other ingredients and blend until combined
4. Form the sticky mixture into balls, then store in the fridge for about 1/2-1 hour
5. Now you can start preparing the chocolate
6. Over low heat mix together cacao butter, coconut oil and maple syrup - when combined, remove from heat, and add cacao (and taste for sweetness)
7. Let cool down a little before dipping the energy bites into the chocolate.
