YUM, these are so delicious.
Here’s what you need: (makes around 15)
- 1 cup oats
- 2/3 cup of almond meal
- Pinch of salt
- 2 tbsp of cacao-coconut sugar (I use gula java cacao - if you don’t have this, you can just mix in 1-2 tbsp of cacao powder, and check for sweetness when all ingredients are combined)
- 30-50g of chocolate chips (optional - I did not have any, so I topped it with homemade chocolate sauce)
- 3 tbsp of honey
- 3 dates (plus the water you will soak it in)
- 8 tbsp of coconut oil
- 2 tbsp of peanut butter (or any other nut butter)
Preheat the oven to 180 degrees
Soak dates in hot water (for at least 5 minutes)
In the meantime blend oats into a flour
Now mix together all dry ingredients & stir
Blend the soaked dates + 3 tbsp of the water, with all liquid ingrefients
Combine dry and wet ingredients, and taste for sweetness
Line a baking tray and use around 1 tbsp of mixture per cookie
Now bake for 12-13 minutes
