WILD HONEY AND LEMON

CINNAMON ROLLS + VANILLA ICING

The last time I tried cinnamon rolls they looked amazing, but didn’t taste amazing at all 😅. 

This time they look and taste great, so if you want to give them a try, here’s what you need:

 

For the dough:

  • 1 cup of greek yogurt 

  • 1 1/2 cups of spelt flour & more for dusting (you can also use white all-purpose flour)

  • 2 tsp of baking powder 

  • 1/2 tsp of salt 

 

For the filling:

  • 3-5 dates (soak for 10 minutes)

  • 1 tbsp of coconut oil

  • 1 heaped tbsp of cinnamon

  • 1 tsp of vanilla powder

  • Use melted butter or coconut oil to brush on the dough before adding the toppings, and after rolling the dough (before cutting into pieces)

 

For the icing:

  • 200g of greek yogurt

  • 1-2 tsp of honey

  • A few drops of lemon juice 

  • 1/2 tsp of vanilla powder

 

Directions:

  1. Preheat the oven to 180 degrees C

  2. Soak the dates in hot/boiling water 

  3. Grease your dish with coconut oil/butter/olive oil

  4. In a bowl mix together flour, salt, baking powder; then add in the yogurt and stir until it all comes together 

  5. Now knead the dough on a clean dusted surface for a couple of minutes 

  6. Roll out the dough into a rectangular shape and brush the butter or coconut oil on.

  7. Blend dates with 1-2 tbsp of date water and coconut oil, then spread on the dough

  8. Now sprinkle the cinnamon-vanilla mix & spread evenly

  9. Roll the dough from the long side into a long roll, then brush with butter or coconut oil and cut into 3-4cm bits & put in the greased dish.

  10. Bake for 20 minutes & prepare the icing in the meantime by whisking the yogurt with the honey, lemon and vanilla

  11. Let cool a little before putting the icing on
