WILD HONEY AND LEMON

N U T E L L A B A R S

These nutella bars are pretty much just a put together of two of my favourite recipes. A pretty genius combination... try them, you'll see!

 

 

 

 

 

Ingredients: 

 

For the base:

  • 1 cup of cashew OR macadamia nuts

  • 3 tbsp of sweetener (agave, maple, rice, coconut nectar)

  • Pinch of salt

  • 1/2 tsp of vanilla 

 

For the nutella:

  • 200-250g of Hazelnuts

  • 2 tbsp of cacao powder

  • 5 tbsp of sweetener (I used a mix of agave, honey and rice syrup) 

  • 2 tbsp of (warm/hot) water

  • A pinch of salt

  • 1/2 tsp of vanilla (optional)

 

Directions:

  1. Preheat the oven to 170-180°

  2. Put the hazelnuts on a tray and put in the oven for 10 minutes

  3. In the meantime take all base ingredients, put into a food processor and blend until relatively smooth

  4. Pour in the mixture in a lined tray (spread the mixture about 1 centimetre thick) and put in the freezer 

  5. Take out the hazelnuts, let cool for a bit, and then peel them (optional - I like to peel as many as i can, at least where it comes off easily)

  6. Then put into a food processor and blend for about 5-7 minutes until smooth, then add in sweetener, cacao powder and salt and vanilla. 

  7. If it turns into a big ball of dough, add in the 2 tbsp of water and blend again - now it should be thick and creamy again

  8. Take the base layer out of the freezer, then add the nutella layer on top (about a centimetre thick again)

  9. Put back in the freezer, and store it there
