Homemade Chocolate Granola

YUM. I love granola, but I never really seem to find one that is actually healthy, and doesn't contain refined sugars. This one tastes just as great, and has lots of benefits for you. I like to add it into my yogurt, top my smoothie bowls with it, or you could just add some milk to it. I also like to snack on the chunky bits, its just that delicious. 

What you need:

- 2 cups of oats

- 1 cup of buckwheat groats

- 1 cup of coconut flakes

- 1-2 tbsp of flax seeds

- 2 tbsp of coconut sugar (optional)

- A hand full of nuts of your choice

- 1/4 cup chia seeds with 1/4 cup + 2 tbsp of water

- 1/3 cup + 1 tbsp of coconut oil

- 1/2 cup of maple syrup or agave

- 2 tbsp of nut butter

- 1/3 cup of cacao powder

- Some vanilla (optional)

 

Directions:

  1. Preheat the oven to 150C

  2. Combine chia seeds with the water and let sit

  3. In the meantime combine oats, buckwheat, flax seeds, coconut flakes and coconut sugar and stir well

  4. Then melt the coconut oil over low heat, add the maple syrup and nut butter - then stir well

  5. Next, add the chia seed mixture and cacao powder and stir until combined 

  6. Now bring the dry and wet mixture together, and stir until everything is covered with the chocolate mix

  7. Spread evenly on a lined baking tray, and bake for around 15 minutes

  8. After 15 minutes stir the mixture, add nuts, then leave in for another 10 minutes

  9. Take out of the oven, and let the granola cool for a while

  10. Pour the granola in an air-tight container, then store in the fridge
