YUM. I love pancakes! I don't have them much, but when I do, I dream of them for daaaaays. This time I thought I'd switch it up a bit, and add something to my batter that I haven't really used in any of my recipes so far... M A T C H A, a real superfood. Matcha is so good for you.. it is packed with antioxidants, boosts your metabolism, burns calories, is rich in fiber, calms your mind, and so much more. The only downside: Matcha is quiet expensive. I therefore use it rarely.. its almost like a treat when I do.. But get around it, and treat yourself to a little matcha boost.
1/2 cup of oats
1/3 cup of yogurt
1 tbsp of chia seeds
1 egg (you can substitute the egg with a flax or chia egg, but pancakes are so much easier when adding an egg.. so if you're not vegan.. add the egg)
1 heaped tbsp of matcha
A pinch of salt
Some vanilla (1/2 tsp)
Some coconut oil
Take a non-stick frying pan and put on the stove over medium to high heat
In the meantime, mix together all ingredients in a food processor (but the coconut oil)
Next, put some coconut oil into the pan and let it heat up
Now take 2-3 tbsp (depending on how big you want your pancakes to be) of the batter and pour into the pan
Leave for 3 minutes, then flip and leave for another 2 minutes (every stove works a little different though, so just check for a slightly golden color when flipping)
Stack on a plate, then top with berries, maple syrup, coconut flakes, dried or fresh fruit, chocolate, nut butter, superfoods, etc.
