Buckwheat & Oat Cookies

YUM! Lately I have been obsessed with buckwheat.. it’s just so good and gives every sweet treat a good crunch ! 

 

If you want to give them a go, here’s what you’ll need:

 

  • 1 cup of oats (gluten-free if needed)

  • 1/2 cup of buckwheat

  • 1/2 cup of melted coconut oil

  • 1 tbsp chia seeds mixed together with 3 tbsp of water

  • 1/2 - 3/4 of a cup of rice malt syrup (depending on how sweet you like it - you can also use honey, agave or maple)

  • 1/2 tsp of baking powder, salt, cinnamon and vanilla 

  • 20-30g of chopped up chocolate 

 

Directions: 

  1. Preheat the oven to 180 degrees celcius

  2. Mix together all dry ingredients and stir

  3. Add all wet ingredients and stir well

  4. Lastly, add the chocolate bits

  5. Scoop out 1 tbsp of the cookie dough, and place on a lined baking tray

  6. Bake for 12-15 minutes, until golden brown (the longer you cook them the crunchier they will be)

  7. Let cool if you can resist

  8. ENJOY
