YUM! Lately I have been obsessed with buckwheat.. it’s just so good and gives every sweet treat a good crunch !
If you want to give them a go, here’s what you’ll need:
1 cup of oats (gluten-free if needed)
1/2 cup of buckwheat
1/2 cup of melted coconut oil
1 tbsp chia seeds mixed together with 3 tbsp of water
1/2 - 3/4 of a cup of rice malt syrup (depending on how sweet you like it - you can also use honey, agave or maple)
1/2 tsp of baking powder, salt, cinnamon and vanilla
20-30g of chopped up chocolate
Directions:
Preheat the oven to 180 degrees celcius
Mix together all dry ingredients and stir
Add all wet ingredients and stir well
Lastly, add the chocolate bits
Scoop out 1 tbsp of the cookie dough, and place on a lined baking tray
Bake for 12-15 minutes, until golden brown (the longer you cook them the crunchier they will be)
Let cool if you can resist
