GRANOLA BARS

WHO DOESN'T LOVE GRANOLA BARS? I sure do love them, and finally managed to make some tasty ones. As you probably know if you have been following my instagram or blog posts, I do love making and eating snacks throughout my day, and these are the perfect energy boost. 

 


So heres what you need:

 

Dry ingredients:

- 2 cups of oats

- 1/2 cup of buckwheat groats

- 1/2 cup of coconut flakes

- 1/2 cup of seeds (i used flax and chia)

- 1/2 cup of dried fruit (optional)

- 1/3 cup of chopped up nuts (optional)

- 1/2 tsp vanilla (optional)

- 1/2 tsp of cinnamon (optional)

- 30 g chocolate chunks (optional)

 

Wet ingredients:

- 2 tbsp of coconut oil

- 1/2 cup of nut butter (i used cashew)

- 1/3 cup of maple or agave syrup (or honey if you're not vegan)

 

Directions:

  1. First preheat the oven to 160°C

  2. Pour oats, buckwheat, coconut flakes, and seeds on a baking tray and bake for 10-15 mins until the oats get a golden color

  3. In the meantime, heat all wet ingredients over low heat, and stir until fully combined

  4. Now put all dry ingredients in a bowl, and stir well

  5. Add the wet mixture and combine until everything is coated with the nutty mixture

  6. Pout into a lined baking tray, and bake for another 5-7 minutes,

  7. Let it cool for a bit, then put the tray into the fridge or freezer for around 1-2 hours, so that the granola bars can set a little bit

  8. Remove from the freezer and cut into the desired size and shape

  9. Store them in an airtight container in your fridge

I might give mine a little chocolate drizzle too..
