Zucchini & Feta Bake

I love this dish. So easy and simple, and just perfect for lunch or dinner, especially throughout summer when you prefer eating something lighter. If you don't love the thought of just having zucchini for dinner, let it be your side dish, you won't regret it (provided that you like zucchini and feta).

All you need is: serves 1-2

  • 2 zucchini

  • 3 tbsp of olive oil

  • Feta (as much as you like - I used around 100g)

  • Pepper

  • Salt

  • Rosemary (or use any other herb)

 

Directions:

  1. First, preheat the oven to 200°C

  2. Then cut the zucchini into the shape of your choice (around 3mm thick - if you like it thicker, increase your baking time)

  3. Put it in a baking dish and coat it with the olive oil, pepper, salt and herb(s)

  4. Stir well, and spread evenly in the baking dish

  5. Bake for 15 minutes at 200°C

  6. After 15 minutes, add the feta cheese on top of the zucchini slices

  7. Bake for another 15 minutes

  8. Enjoy!
