The first time I tried cinnamon rolls they looked amazing, but didn’t taste amazing at all 😅.
The second time they looked and tasted pretty good..
This time, they turned out better.. so if you want to give them a try, here’s what you need:
For the dough:
1 cup of greek yogurt
1 1/2 cups of spelt flour & more for dusting (you can also use white all-purpose flour)
2 tsp of baking powder
1/2 tsp of salt
For the filling:
3-5 tbsp of agave or maple syrup
1-2 tbsp of cinnamon (depending on how cinnamony you like it)
1 tsp of vanilla powder (optional)
Use melted butter or coconut oil to brush on the dough (before cutting into pieces)
For the icing:
200g of greek yogurt
1-2 tsp of honey, maple or agave syrup
A few drops of lemon juice
1/2 tsp of vanilla powder

Directions:
Preheat the oven to 180 degrees C
Grease your dish with coconut oil/butter/olive oil
In a bowl mix together flour, salt, baking powder; then add in the yogurt and stir until it all comes together
Now knead the dough on a clean dusted surface for a couple of minutes
Roll out the dough into a rectangular shape
Mix together the agave syrup, cinnamon and vanilla, then spread the mix evenly
Roll the dough from the long side into a long roll, then brush with butter or coconut oil and cut into 3-4cm bits & put in the greased dish.
Bake for 20 minutes & prepare the icing in the meantime by whisking the yogurt with the honey, lemon and vanilla
Let cool a little before putting the icing on (or have it on the side)
Drizzle with agave/maple syrup (optional)
