What sounds better than super delicious cookies that’s aren’t bad for you at all? (Unless you eat the whole batch maybe..) Well, I can’t think of anything at all 😅

Here’s what you’ll need:

  • 2 cups of oats (use gluten-free if required)

  • 3/4 cup of my homemade nutella (or any other nut butter you may have at home)

  • 1/4 cup of almond meal

  • 1/4 cup of coconut sugar

  • 1/4 cup of melted coconut oil

  • 2 tbsp oat milk (or any other you have at home)

  • 40g chocolate (I use the 75% vivani)

  • A handful of chopped up cashew nuts

  1. Preheat the oven to 180 degrees C and line a baking tray

  2. Combine all dry ingredients and stir well (but the chocolate chips and cashew nuts)

  3. Then add all the wet ingredients and stir well

  4. Lastly add in the chocolate chunks and cashew nuts and stir well

  5. Let sit for about 5 minutes

  6. Then take about a tbsp of cookie dough and form into a ball, then press down on the baking sheet into cookie shape

  7. Now bake for about 10 minutes (longer if you want them crunchy on the outside, and less soft on the inside)

  8. Let cool, then enjoy, or make them into sandwiches by adding about a tbsp of homemade nutella in-between two cookies
