EGGS ON TOAST

I know I don't usually post savory things, but Ive been trying to switch up my breakfasts a little lately, as my skin has been breaking out lots, and Im just trying to figure out why..

 

But anyway.. this was SO DELICIOUS! And so easy and quick to make! 

 

Eggs on toast + spinach, feta and leek! And oh my.. this bread is heaven.. Ill link it for you here, in case you're from Austria and want to give it a try. Its gluten free, paleo, and low carb.

 

 

 

What you need: (serves 1)

  • 1-2 tbsp of olive oil

  • A handful of spinach

  • About 10cm of leek/or use onion

  • 1-2 tbsp of soy sauce or tamari

  • 30g of feta

  • A pinch of salt & pepper

  • 2 eggs

  • Salt & pepper

  • 2 slices of toast/bread

 

Directions:

  1. Start with heating the olive oil in a pan, then adding the leak, soy sauce/tamari, salt, pepper and spinach - and cook for about 3-4 minutes

  2. Then start making the eggs (whichever way you prefer - i fried them) - in the meantime put the slices of bread/toast into a toaster or the oven if you'd like them to be warmed

  3. Take the slices of bread, top with the leak/spinach mix, then the eggs, and then top with the feta (if you like)

  4. ENJOY!
