
These are hands down the best muffins I’ve ever made 😍 so fluffy and delicious ✨
Ingredients:
1 cup of almond meal
1/3 cup of oat flour
1 tbsp of baking powder
2-3 tbsp of cacao powder
Pinch of salt
1/3-1/2 cup of coconut sugar (try the dough before pouring into the muffin form - you want it to be sweet enough as they’ll be less sweet when they’re done)
50-70g of chocolate (chips)
3 eggs
1/3 cup of milk (I use oat)
2 tbsp of nut butter
4-5 tbsp of coconut oil
1 tbsp of honey or agave or maple syrup
Directions:
Preheat the oven to 180C & line the muffin tray
Combine all dry ingredients (but the chocolate), then add in all wet ingredients - stir well
Add in the chocolate chips, stir again
Taste for sweetness
Pour into the muffin form
Bake for 18-22 minutes
